Tripa enfarinhada is a delicacy of Portuguese cuisine. It is an enchido (stuffed sausage) popular in northern Portugal, especially in the regions of Minho and Douro Litoral. In those regions, it can be purchased in butcher shops already prepared, ready to fry, or made completely at home. The main ingredients are the intestines of pork, corn flour, cumin, and pepper.

Normally, the tripas enfarinhadas are fried and cut into long slices. They are served as an accompaniment to dishes such as roast pork, Minho style, or may simply be consumed as a snack.
